How to make a delicious Masala Chai
Have you always wanted to know how to make a delicious Masala Chai?
If you have loved the taste of a real Masala Chai in India, then I have the recipe and have made it with great success.
It takes only about 10 minutes and very few ingredients.
Ingredients
You will need to have to hand, the following fresh ingredients;
- 1 clove
- 1 peppercorn
- 1 x 1/2 inch piece of cinnamon
- 1 star anise
- 1 green cardamom
Crush all of the above ingredients in your mortar and pestel, whilst you bring a cup of water to the boil in a small pot.
Add these crushed ingredients to the boiling water and simmer to bring out the flavour of the spices into the water. Don’t boil them to bits, just simmer gently. About 3 – 5 minutes covered, so it doesn’t boil dry.
Sprinkle half a teaspoon of loose black tea leaves in to the brew and continue to simmer for another 2 minutes only. Not too long or the brew turns bitter. Make sure you do not let it dry out, that there is still plenty of water in the pan. Some of it will evaporate, but you need to be left with at least half a cup.
Now add sugar to your own taste. I like 1 heaped teaspoon to get the real taste of the Indian sweet Masala Chai. Stir in briefly and then pour in half a cup of full milk and bring to the boil. Once it boils, turn the element off and let it rest for a few seconds.
Then pour over a strainer into your cup and enjoy.
